Healthy Enchilada Bake
This enchilada bake is super easy to make! It is healthy and a family favorite!

Pinch of Wellness
15 oz can
(low salt preferred)
shredded & cooked
28 oz can
Preheat oven to 350F.
Grease an 8x8 pan, set aside.
Cut all tortillas in half.
Layer 4 tortillas in the bottom of the pan (8 halves total)
Spread ⅓ of the enchilada sauce over the tortillas
Evenly top with ⅓ of the beans, ⅓ of the chicken and ⅓ of the cheese.
Repeat the beans/chicken/cheese layering 2 more times.
Bake for 25-30 minutes, or until cheese is melted and golden brown. Enjoy!
