Place the ground turkey in a large skillet. Cook over medium heat until brown. Add 1 teaspoon chili powder, ½ teaspoon garlic powder, ½ teaspoon onion powder and salt. Stir until combined.
Remove meat from skillet and set aside once cooked.
Chop sweet potatoes into ¼ inch cubes. Grease skillet with pan release spray.
Add sweet potatoes, water, ½ teaspoon onion powder, ¼ teaspoon garlic powder, ½ teaspoon chili powder and salt to the skillet.
Cover with a lid and cook for 8 minutes, stirring about halfway through. (Sweet potatoes should be tender when done. Do not overcook, or they will be mushy).
Add ground turkey to the sweet potatoes and mix gently using a spatula.
Top with shredded mozzarella cheese and garnish with cilantro if desired. Serve warm.
