Ingredients

cups
quinoa
cooked
1
package
taco seasoning
1
teaspoon
cumin
½
teaspoon
garlic powder
1
15 oz can
black beans
drained, no added salt if desired
1
15 oz can
corn
drained
1
10 oz can
rotel
1
medium
bell pepper
diced
½
cup
onion
diced
1
cup
chicken breast
diced
1
cup
shredded mexican cheese
Instructions
Preheat oven to 350 F.
In medium bowl, combine the cooked quinoa, taco seasoning, cumin and garlic powder. Mix well.
Add the black beans, corn, rotel, diced pepper, onion and chicken. Combine until all ingredients are mixed.
Spread mixture evenly into a greased 9×9 inch pan.
Bake for 25 minutes. Add cheese to top, bake an additional 5 minutes.
Serve warm! Garnish with avocado slices, salsa or desired toppings!
